What's a Macaron?

Not to be confused with Macaroons, the desiccated coconut cookies your grandma used to make; macarons are a very popular French almond cookies that are now available in the US. Originating in the 18th century in France and Italy, macarons are known for their wide array of colors and flavors. While macarons are small enough to fit in the palm of your hand and can be pricey, creating the bite sized sweet takes a huge degree of skill. 

A macaron takes 72 hours to travel from the oven to your taste buds. Macarons are the result of just 4 natural ingredients: almond flour, air, sugar and egg whites.

 

The cookie has a crisp outer shell and a soft and light chewy center, bursting with flavor. A skilled baker can create an endless variety of flavors from buttercream, jams and ganache. Yum!

How does LJM create our Macarons?

There was a love hate relationship between us and these little angelic cookies. They are so finicky and take a lot of skill to make and we were having some difficulties producing them. And as the old adage goes, "if at first you don't succeed, try try & try 100 more times again."...right?

We never gave up! By the 101st try, we finally had it down to a science. We love making macarons, it is a passion within a passion. Our niche. And that "take no prisoners" attitude is how we like to do things here. 

We are always paying attention to all the details. From always checking the oven temp and tweaking it until it's just right, filling, decorating, packaging and storing; we take great care in our macarons as if our lives depended on it.  

Are they gluten free?

You bet! Macarons are naturally gluten free, using only almond flour, which is simply, ground almonds.

We go the extra mile to make sure all of our of macarons are completely gluten free by purchasing only certified gluten free products and additives.  On top of that, the bakery is a 100% gluten free facility!  

How can I get some Macarons?

We always welcome walk ins! You can also custom order and pick up your goodies! Come and check us out!

Can you personalize our Macarons?

Yes! We'd be happy to customize your macarons. From colors to flavors, painted macarons, monograms and shapes; we are always up for the challenge and love to have fun with our cookies. Contacts us for more info and to talk about your specific request.

How long will my macarons stay fresh?

For best results, the prime time to eat the macarons are as soon as they come into your hands. But, if you have the will power to not eat them all in one sitting, we suggest that you store them in an air tight container in the refrigerator for up to 5 days. We never freeze our macarons, but you can for up to a month. Please allow 15 minutes for your macarons to reach room temperature if they are coming from the refrigerator or 30 minutes if from the freezer. 

What is Celiac Disease?

Celiac disease is an immune disease in which people can't eat gluten because it will damage their small intestine.  Gluten is a protein found in wheat, rye, and barley.  When people who have celiac disease eat gluten, the result is a reaction in their small intestine that can lead to symptoms such as diarrhea, abdominal pain, bloating and weight loss. Early diagnosis of celiac disease is important because if left untreated the disorder can result in serious complications. 

Is the bakery a safe environment for those with Celiac Disease?

We absolutely are! We take great care and great pride to make sure we have a clean, gluten free facility that is void of any cross contamination. We also make sure we purchase products that are certified gluten free made in its own facility. 

What about other allergens?

Our macarons are made with almond flour or other nut flours depending on the flavors we are doing. Various fillings may also contain allergens including ingredients like Linalool, the allergen in lavender. Although we take great great care to keep from cross contamination, some cookies may come in contact with other common allergens like peanuts, tree nuts, milk, eggs and soy.

How can I place an order?

All orders can be placed via email, Facebook or by phone. Please allow us up to 48 hours to accommodate custom orders and 2 weeks for events. 

Can I cancel my order?

Yes you can cancel your order 24 hours prior to delivery or pick up; as long as it hasn't been processed. If it has been processed, a 35% cancellation fee will be required. Please contact us as quickly as possible following your order to request cancellation.
